A Weeknight Guide to Better Pasta
Most weeknight pasta goes wrong in the same three places: the water isn’t salty enough, the sauce is finished before the pasta joins it, and nothing ever gets a splash of the starchy cooking water to pull it together. Fix those three things and almost any recipe improves.
Salt the water like you mean it
The pasta water should taste like the sea — genuinely salty, not just seasoned. It’s the only chance the noodle itself gets to be seasoned from the inside, and no amount of sauce fixes bland pasta underneath it.
Finish the pasta in the sauce
Pull the pasta about a minute before it’s fully done and finish cooking it directly in the sauce pan with a splash of pasta water. The starch that clings to the noodles emulsifies the sauce instead of sitting on top of it — it’s the single biggest difference between home pasta and restaurant pasta.
- Reserve at least a full mug of pasta water before draining — you’ll use more than you think
- Add cheese off the heat, a little at a time, so it doesn’t seize into clumps
- Warm the serving bowls — cold ceramic kills a hot sauce faster than you’d expect
Good pasta isn’t about the recipe. It’s about the last two minutes before it hits the bowl.
None of this requires special ingredients. It’s technique, and it’s the kind you keep for every pasta dinner afterward, not just the one recipe you were following.
