It&#8217;s the only chance the noodle itself gets to be seasoned from the inside, and no amount of sauce fixes bland pasta underneath it.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Finish the pasta in the sauce<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pull the pasta about a minute before it&#8217;s fully done and finish cooking it directly in the sauce pan with a splash of pasta water. The starch that clings to the noodles emulsifies the sauce instead of sitting on top of it \u2014 it&#8217;s the single biggest difference between home pasta and restaurant pasta.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Reserve at least a full mug of pasta water before draining \u2014 you&#8217;ll use more than you think<\/li>\n\n\n<li>Add cheese off the heat, a little at a time, so it doesn&#8217;t seize into clumps<\/li>\n\n\n<li>Warm the serving bowls \u2014 cold ceramic kills a hot sauce faster than you&#8217;d expect<\/li>\n<\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\">Good pasta isn&#8217;t about the recipe. It&#8217;s about the last two minutes before it hits the bowl.<\/p>\n<\/blockquote>\n\n\n\n<p class=\"wp-block-paragraph\">None of this requires special ingredients.
